Lofty Goals of Lofthouse Cookies

Taylor Terreri, Editor

My favorite cookies are the ridiculously sweet, melt-in-your-mouth Lofthouse Cookies. I have always wanted to recreate these cookies, so much that it has been a lifelong goal of mine, so I decided to live life to the fullest and find out how.

Ingredients:

Dough

  • 1 cup sugar
  • ½ cup butter (softened to room temperature)
  • 2 eggs
  • ½ cup sour cream
  • 2 tsp vanilla extract
  • 3 cups all purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt

Frosting

  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 1 tbsp milk
  • ½ cup butter (softened to room temperature)
  • Sprinkles

Directions:

Cookies

  1. Preheat oven to 350 ℉.
  2. Mix sugar and butter in mixer until smooth.
  3. Sift flour, baking powder, baking soda, and salt in a large bowl.
  4. Slowly combine wet and dry ingredients
  5. Create balls using 3 tablespoons of dough and place on an ungreased cookie sheet.
  6. Put in oven for 11-12 minutes. The cookies will not appear to be done, but that is fine.
  7. Place cookies on cooling rack and decorate with frosting and sprinkles after the cookies have cooled.

Frosting

  1. Beat butter in mixer for 30 seconds.
  2. Add powdered sugar 1 cup at a time.
  3. Mix in vanilla extract and the milk in batches (as all of it might not be necessary) until fluffy.
