Soft Butter Cookies

The holiday season is over, but cookies are a great year-round treat. This recipe, originally from St. Louis, is absolutely delicious. These cookies are not something you will want to share.

These delicious cookies will satisfy your post-holiday sweet tooth.

Ingredients:

  • ½ cup softened butter
  • 8 oz cream cheese
  • 1 egg
  • ¼ tsp vanilla extract
  • 1 box of yellow cake mix
  • 1 cup (or less) of powdered sugar

Directions:

  1. Add the cream cheese, butter, egg, and vanilla extract to a mixing bowl.
  2. Use a mixer to whip the ingredients until light and fluffy.
  3. Stir in the cake mix until a thick and smooth dough forms.
  4. Refrigerate the dough for 30 minutes.
  5. Preheat the oven to 350°.
  6. Pour powdered sugar into a separate bowl.
  7. Once finished refrigerating, roll the dough into little balls, cover them in powdered sugar.
  8. Bake the cookies for 12 minutes. Time may vary depending upon how thoroughly baked you would like them.
  9. Let cool, then enjoy!
