A Little Green for Saint Patrick’s Day

When I think of March, I automatically think of St. Patrick’s Day and everything green. Not to mention McDonald’s Shamrock Shakes, which are to die for! If you are looking for a festive and delicious treat to make this St. Patrick’s day (or any day!), look no further. Here is a recipe for a minty pie that is perfect for this holiday.

Ingredients:

  • ¾ cup mini chocolate chips
  • 1 can evaporated milk
  • 1 tablespoon butter
  • 1 (9 in.) chocolate crust
  • 1 package instant vanilla pudding
  • ⅓ cup water
  • 1 teaspoon peppermint extract
  • 4 drops food coloring
  • 1 container (8 oz.) whipped topping
  • Optional: Chocolate chips and whipped cream for top of pie

Directions:

  1. Microwave the chocolate chips and ⅓ cup of the evaporated milk for 50 seconds, and stir until the chocolate is smooth without any lumps. Stir in the butter.
  2. Pour chocolate mixture into the pie crust and refrigerate until cool (this will take about 20 minutes).
  3. Beat the rest of the evaporated milk, vanilla pudding package, water, food coloring, and peppermint extract until combined. It won’t be very thick yet. Add the whipped topping and mix.
  4. Pour the minty mixture into the pie pan, and refrigerate it for 1 ½ to 2 hours.
  5. Once cooled, sprinkle chocolate chips and a dollop of whipped cream on the pie.
  6. Enjoy!
