This chocolate cookie recipe is certainly super, and is the perfect addition to your culinary repertoire as we approach baking season. If you are looking for a fun and easy bake, you have found the right recipe.

Ingredients (makes 4 dozen):

  • 8 oz cream cheese
  • ½ cup butter or margarine softened
  • 1 egg
  • 1 ½ cup sugar
  • 12 oz chocolate or mini chips
  • 2 ½ cup flour
  • 1 ½  tsp baking soda
  • ½ chopped nuts (optional)

Steps:

  1. Preheat oven to 350 degrees.
  2. Beat cream cheese with butter, egg, and sugar until light and fluffy.
  3. Melt 1 cup of the chocolate chips and stir into batter. You can use a double boiler (a bowl on top of boiling water) or melt the chocolate chips in the microwave through 20 second intervals, stirring in between with a careful eye to avoid burned chocolate.
  4. Stir in flour, baking soda, and nuts (if desired).
  5. Mix in remaining unmelted chocolate chips.
  6. Use a tablespoon to form the cookies on the cookie sheet.
  7. Bake a dozen at a time for 10-12 minutes or until firm around the edges.
  8. Remove cookies from oven.
  9. Cool the cookies.

The results are beautiful and delicious. Have fun enjoying this treat by itself or with a tall glass of milk.
