Rollin’ into the Holiday Season

Fall is here and Thanksgiving is just around the corner. There is no better way to spice up the season than with delicious pumpkin rolls.

Roll up to Thanksgiving with this pumpkin roll.

These pumpkin rolls are sure to catch everyone’s eye at your next dinner party. They look complex, but don’t take much time at all.

Cake:

Ingredients:

  • 3 eggs
  • 1 cup sugar
  • ⅔ cup pumpkin puree
  • 1 tbsp. lemon juice
  • ¾ cup flour
  • 1 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. baking powder
  • 2 tsp. cinnamon

Directions:

  1. Beat together eggs and sugar in a blender on high speed for five minutes. Then mix in pumpkin puree and lemon juice with a spoon and set aside.
  2. Mix together the flour, salt, nutmeg, baking powder, and cinnamon, then add to above mixture.
  3. Preheat oven to 375 degrees Fahrenheit. Line a 10×15 baking sheet with wax paper and pour above mixture into it. Bake for 15 minutes.
  4. Lay out a tea towel and cover it with powdered sugar. Put the baked pumpkin mixture on it. Roll it up with the towel and put in refrigerator until cool.

Icing:

Ingredients:

  • 1 cup sugar
  • 4 tbsp. butter
  • 6 oz. cream cheese
  • 1 tsp. vanilla

Directions:

  1. Mix sugar, butter, cream cheese, and vanilla in a bowl until smooth.
  2. Unroll the pumpkin mixture and spread the icing on it. Roll back up and keep in refrigerator until ready to serve.
