Lemon Love

Lemon bars are the perfect way to brighten up your day. With their sweet-and-sour filling and  crunchy crust, you’ll be satisfied with each and every bite. They’re simple to make and are the perfect dessert for any crowd.

Ingredients:

  • 1 cup butter or margarine
  • 2 cups sugar
  • 2 ¼ cup flour
  • 4 eggs
  • 3 small lemons, juiced

Directions:

  1. Preheat oven to 350º F.
  2. Blend softened butter, 2 cups flour, and ½ cup sugar, then press into the bottom of a 9x13in pan.
  3. Bake crust for 20 minutes.
  4. In another bowl, pour 1 ½ cups sugar and ¼ cup flour, then whisk in the juiced lemons and eggs.
  5. Pour above mixture over the baked crust. Then put into oven for 20 minutes. Sprinkle powdered sugar on top, and let cool.

This recipe takes very little time to put together, and tastes amazing. One thing I would try, if I made the recipe again, would be using a graham cracker crust. The normal crust is satisfying and allows the lemon flavor to shine, but if you are looking for a sweeter, crunchier contrast, the graham cracker crust is a great option.
