Healthy Homemade Pumpkin Cookies

With the Halloween season coming to an end, why not end the season with some homemade pumpkin cookies. You will be able to bake your own pumpkin cookies with just a few ingredients.

Ingredients:

  • ½  cup white whole wheat flour
  • ¼ cup all-purpose flour
  • ¼ cup rolled oats
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • ¼  teaspoon ground ginger
  • ¼  teaspoon ground nutmeg
  • 6 tablespoons unsalted butter
  • ¼  cup brown sugar   
  •  ¼  cup granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup dark chocolate chips

Directions:

  1. Preheat oven to 375 degrees.
  2. Whisk the dry ingredients, besides chocolate chips, together. then use a separate bowl and whisk the wet ingredients, without the vanilla, egg, and pumpkin puree, together.
  3. Add the vanilla, egg, and pumpkin puree to the wet ingredients.
  4. Add the wet ingredients into the dry ingredients. Beat until the flour disappears.
  5. Stir in the chocolate chips.
  6. Scoop the dough and place on a parchment-lined baking sheet as a dough ball.
  7.  Bake for 11-12 minutes.
