Since Arizona’s climate won’t make it feel like fall until the end of November, we all need a little reminder that it is soon to be fall. These pumpkin cookies will fill the upcoming season with warmth and sweetness.
Start to Finish: 60 minutes: 15 minutes preparation, 45 minutes baking
Servings: three dozen cookies
Ingredients:
2 ½ cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
½ tsp. ground nutmeg
½ tsp. ground cloves
½ tsp. salt
½ cup butter, softened
1 ½ cups white sugar
1 cup canned pumpkin puree
1 egg
1 tsp. vanilla extract
Preheat the oven to 350° F. Stir together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt using a spoon in a medium bowl. Blend butter and white sugar together in a separate bowl. Then combine the canned pumpkin puree, egg, and vanilla extract together with the butter and white sugar mixture. Finally, blend the dry mixture with the other bowl to create your cookie dough. Bake the cookies for 15 minutes.
Now you can relax while your newest project bakes, and be ready to down some fall flavor with a cold glass of milk!
