Banana Coconut Bread


This banana coconut bread is the perfect healthy snack.

It’s the New Year and some people are trying to make healthier choices. However, they still want to be able to enjoy what they are eating. This can be difficult to achieve in a snack, but this banana coconut bread really hits the spot.


  • ⅔ cup honey or maple syrup
  • ½ cup coconut oil- measure as a solid, mix as a liquid
  • 2 eggs
  • 4 mashed bananas
  • 2 cups almond flour
  • ¼ cup coconut flour
  • ⅓ cup coconut shreds
  • ¼ cup chia seeds
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder


  1. Preheat the oven to 350 degrees.
  2. Add the honey to the melted coconut oil. Then add the mashed bananas and the eggs to the mixture. 
  3. In a separate bowl, add all of the dry ingredients together and mix well. 
  4. Next slowly add the dry mixture into the wet ingredients and whisk until smooth. 
  5. Put in the oven for 30-35 minutes and let cool for 10 minutes.
