Special Bacon Mac and Cheese

A creative family take on the classic dish of mac and cheese.

Ingredients:

  • 3 tbsp. butter
  • 3 tbsp. all-purpose  flour
  • 2 cups milk
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. garlic powder
  • 1 tsp. chili seasoning or desired amount of preferred seasoning
  • 1 lb of bacon
  • 16 oz. box of macaroni
  • 8 oz. parmesan cheese block
  • 8 oz. cheddar cheese block
  • 8 oz. mozzarella cheese block
  • ½ cup french fried onions
  • 1 tbsp. melted butter

Instructions:

  1. Thaw your bacon until the bacon is at room temperature. 
  2. Line a baking sheet with tin foil and put a wire rack on top.
  3. After the bacon finishes thawing, line it on the rack and bake at 385 degrees for 25 minutes or until crispy.
  4. While the bacon cooks, grab a pot and fill with water. Boil your macaroni. Strain when done cooking.
  5. When the bacon is done cooking, take it out of the oven and crumble into small chunks and put into a bowl. Put the bowl aside.
  6. Grate your cheeses and place in a separate bowl. Mix the cheeses and put the bowl aside.
  7. Grab a medium sized saucepan and melt butter over medium heat. Once melted, add flour and whisk until fluffy and bubbly.
  8. Once that is done, turn the heat down to low and whisk in your milk . Add 2 ½ cups of your cheese mixture into the saucepan. Add in a teaspoon of your chili seasoning, or a seasoning of your choice.
  9. When the cheese mixture is done cooking, take off heat and pour into the macaroni.
  10. Grab a 9-by-13 baking tray and spray with non-stick spray. Pour the mac and cheese in, then pour the rest of your cheese on top.
  11. Next, take ¼ cup of bacon out of the bowl and pour the rest on top.
  12. Take your melted butter and pour it in a bowl, mixing in your french fried onions and remaining bacon. Pour that mixture onto the mac and cheese.
  13. Bake the mac and cheese in the oven for 20 minutes at 350 degrees. When finished, take out and sprinkle some chili seasoning on top.
  14. Serve and enjoy!
