Cupcakes and Jell-O are two classic American sweet treats. When you combine them, you get a sweet, Jell-O flavored cupcake that is delicious. This recipe makes 20 to 24 cupcakes depending on the size of your cupcake pans.
Ingredients:
- Yellow cake mix
- 3 oz. Jell-O or gelatin dessert mix
- 2 cups water
- ⅓ cup vegetable oil
- 3 eggs
- 1 tbsp. vanilla extract
- 2 cups heavy whipping cream
- ¼ cup powdered sugar
Instructions:
- In a mixer, mix the cake mix, vegetable oil, 1 cup water, eggs, and ½ tablespoons of vanilla extract. Mix slowly until cake mix is incorporated, then mix on high for about 2 minutes.
- Preheat the oven to 350° Fahrenheit. Line the cupcake pans with cupcake liners, then fill each liner about ¾ of the way.
- Bake for 14 minutes, then remove from the oven and let cool in the pans for 5 minutes. After that, transfer to a cookie sheet.
- Boil ½ cup of water, then pour into a bowl. Pour the Jell-O mix into the bowl and whisk to dissolve. Once dissolved, pour in ½ of room-temperature water.
- Take a 5 ml syringe and fill it with Jell-O, then inject it into each of the cupcakes twice.
- To make the frosting, mix the heavy whipping cream and ½ tablespoons of vanilla extract in a mixer and whisk on high for 2 minutes. After 2 minutes, pour in the powdered sugar. Once the mix starts to thicken, pour in any remaining Jell-O. Stop mixing when the frosting reaches a nice, firm texture.
- Apply a spoonful of frosting to each cupcake, then refrigerate overnight.
