(Don’t) Bake a Cake

Any day is a good day for cake. But, if you don’t want to take the time and effort to actually bake one, here’s an easy way to make a great dessert!

Ingredients:

  • A package of graham crackers
  • 1 tbsp. espresso powder
  • 1 cup heavy whipping cream
  • 2 boxes of instant pudding mix of your choice
  • 3 cups of milk
  • A large serving pan or tray with walls taller than 3”
  • At least 2 bowls and one container

Steps:

  1. Pour the heavy whipping cream into a bowl and use a hand mixer to whisk until soft peaks form. A whisk could be used, but it takes a lot more effort.
  2. Then, pour one cup of milk into a container wide enough for you to dip a graham cracker in. Microwave the milk for around 30 seconds, then pour the tablespoon of espresso powder in. You heat the milk so that the powder can dissolve easier. Mix together well, so the liquid looks like actual coffee.
  3. Open the boxes of instant pudding and make according to directions. I chose vanilla, but it could be any type.
  4. Combine the heavy whipping cream and pudding into one bowl and use the hand mixer again to mix together.
  5. To start creating the cake, take a large spoonful of the “frosting” and spread it out on the bottom of the tray with the tall walls. This layer should be thin, but the bottom should be covered. Then, dip a graham cracker in the espresso powder and milk mix, then place it on the layer. Repeat this until the graham crackers create a layer. Break graham crackers to help fill in some parts that a whole graham cracker can’t reach.
  6. Once your layer is complete, place more of the pudding on top. This layer should cover the graham crackers, and be about a fourth of an inch thick.
  7. Repeat this process two more times, making sure to finish with a layer of pudding.
  8. Decorate to your liking. I used chocolate shavings, but anything goes.

And you’re done! Let it sit in the refrigerator overnight, and serve within a week. This simple, delicious treat is sure to please anyone!
