Tasty Tomatoes, Scrumptious Soup

Made almost entirely of vegetables, tomato soup is a healthy and delicious meal that everyone can enjoy.
Ingredients:
- 3 pounds of roma tomatoes
- 1 pound of grape tomatoes
- ½ onion
- 4 large carrots
- 8-10 cloves garlic
- Olive oil
- 4 cups of vegetable stock
- 1-2 tablespoons of pesto
- ½ teaspoon of chili pepper flakes
- 1-2 teaspoons of balsamic vinegar
- Salt & pepper, to taste
Materials:
- 1 large pan
- Blender
- 1 large pot
Directions:
- Preheat the oven to 350 degrees Fahrenheit.
- Cut the roma tomatoes into halves. Peel the carrots and chop into 1-inch pieces.
- Spread roma tomatoes, grape tomatoes, onion peels, garlic cloves, and carrots on the pan. Drizzle olive oil, sprinkle salt and pepper, and cook in the oven for 30 minutes.
- Transfer all ingredients into the blender (you can do sections at a time if the blender is too small), add vegetable stock, and blend together until it is a smooth consistency.
- Pour blended ingredients into the pot. Add pesto, chili pepper flakes, and balsamic vinegar, and stir on low heat until everything is combined.
