Tasty Tomatoes, Scrumptious Soup

Made almost entirely of vegetables, tomato soup is a healthy and delicious meal that everyone can enjoy.


  • 3 pounds of roma tomatoes
  • 1 pound of grape tomatoes
  • ½ onion
  • 4 large carrots
  • 8-10 cloves garlic
  • Olive oil
  • 4 cups of vegetable stock
  • 1-2 tablespoons of pesto
  • ½ teaspoon of chili pepper flakes
  • 1-2 teaspoons of balsamic vinegar
  • Salt & pepper, to taste


  • 1 large pan
  • Blender
  • 1 large pot


  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Cut the roma tomatoes into halves. Peel the carrots and chop into 1-inch pieces.
  3. Spread roma tomatoes, grape tomatoes, onion peels, garlic cloves, and carrots on the pan. Drizzle olive oil, sprinkle salt and pepper, and cook in the oven for 30 minutes.
  4. Transfer all ingredients into the blender (you can do sections at a time if the blender is too small), add vegetable stock, and blend together until it is a smooth consistency.
  5. Pour blended ingredients into the pot. Add pesto, chili pepper flakes, and balsamic vinegar, and stir on low heat until everything is combined.
