Mondays and Pancakes

Mondays can be a drag, but pancakes can be fun. Together these two make a fabulous combo that make the best of Mondays.

It’s the start of fall and a new week. If you hate Mondays and never want to leave the comfort of your bed, try these two great pancake recipes that give you cute pancake pops or your favorite IHOP Silver Dollar Pancakes.

Ingredients

  • Pancake mix
  • Bottle of choice syrup
  • 50-count pack of lollipop sticks
  • Peanut butter
  • Bananas
  • Other assorted toppings of your choice
  • Coconut oil or nonstick spray

Pancake Pops

  1. In a medium size bowl, prepare the pancake mix as instructed.
  2. Preheat griddle and spray with coconut oil or nonstick spray. Scoop a small amount of pancake mix to form a circle. Use a tablespoon and place lollipop stick in the center. Cover the lollipop stick with a small amount of batter.
  3. Slice up some bananas and sprinkle on top of pop.
  4. Cook on one side until bubbles start to form, and then carefully flip pancake. Cook until golden.
  5. Repeat steps two through four until you’ve made desired amount of pops.
  6. Serve with a variety of syrups and toppings.

IHOP Silver Dollar Pancakes

  1. In a medium size bowl, prepare pancake mix as instructed.
  2. Apply coconut oil or nonstick spray.
  3. Scoop four tablespoons of batter onto the griddle.
  4. Cook on one side until bubbles form, and carefully flip until both sides are golden.
  5. Repeat steps two through four for desired amount of pancakes.
  6. Serve in stacks of five just like IHOP. Add fruit, syrups, whip cream, or any other fun toppings.
