Banana Nut Muffins

These banana nut muffins are an easy breakfast to make and enjoy before a stressful school day.

Ingredients:

  • 2 cups of flour
  • ¼ cup of sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup of milk
  • 1 egg, beaten
  • ¾ cup mashed banana
  • ½ cup chopped walnuts

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Grease a 12-cup muffin pan to ensure round muffin tops.
  3. Sift flour, sugar, baking powder, and salt into a medium bowl, and make a well in the center.
  4. Mix milk, egg, oil, banana and walnuts in a small bowl.
  5. Pour mixture into well. Mix batter just until moistened; do not overmix. Spoon batter into muffin cups.
  6. Bake until a toothpick comes out clean, which takes about 15 minutes.
