Strawberry Cupcakes

With Valentine’s Day nearing, there are so many sweet treats in stores, but it isn’t too difficult to make your own delicious holiday goodies. These strawberry cupcakes are perfect to get into the Valentine’s Day spirit. If you like strawberries and cupcakes, you will love this mouthwatering recipe.

Start to Finish: 20 minutes

Servings: 12

Ingredients:

¾ cup of strawberries, cut in half (or one half cup of strawberry jam)

1 teaspoon of baking powder

1 ½ cup of flour

¼ teaspoon salt

¼ cup milk

½ cup butter, softened

1 cup sugar

1 large egg

2 large egg whites

1 teaspoon vanilla extract

Strawberries(optional for topping)

Chocolate chips(optional)

Sprinkles(optional)

Preheat your oven to 350 degrees. In a medium sized bowl, combine flour, baking powder, and salt and set aside. Then, blend the strawberries in a blender until they are a thick, smooth sauce. Empty the strawberries into a 1/2 measuring cup and set aside. If you are using jam you can skip this step.

Using an electric mixer (or a whisk and some very strong arms) cream butter until it is slightly fluffy. Gradually blend in sugar, turn the blender to low, and add the eggs and vanilla. Mix until the batter is lightly blended. Mix together the milk and the 1/2 cup of blended strawberries. Alternate between the flour and the milk mixture to the mixer slowly ending with flour.

Make sure to scrape down the sides of the bowl and blend well. Using a tablespoon, add the batter to a muffin pan with cupcake liners. Bake them for 20 to 25 minutes or until lightly browned. Then let the cupcakes cool before frosting. Use some tasty decorations like sprinkles, chocolate chips, and sliced strawberries to make your cupcakes look even sweeter.
