This recipe is great for the holiday season, and should be a regular across every household. This dish is a mixture of marshmallows and sweet potatoes, the perfect balance of sweetness and creaminess.
Ingredients:
- 4 lbs sweet potatoes
- ½ cup unsalted butter
- ½ cup whole milk (or cream for richer texture)
- 2 large eggs, beaten
- ⅓ cup dark brown sugar
- 2 tsp. vanilla extract
- 1 tsp. ground cinnamon
- ¼ tsp. nutmeg
- 1 tsp. kosher salt
- 2 ½ cups mini marshmallows.
Instructions:
1.Preheat the oven to 425° Fahrenheit. Place your potatoes on a baking sheet, and bake until soft (45-55 minutes).
2. Peel the potatoes, and mash in a large bowl until smooth.

3. Stir in melted butter, milk, eggs, brown sugar, vanilla, cinnamon, nutmeg, and salt. Mix until evenly combined into the potatoes. Add orange zest if desired.
4. Spread the mixture into a greased 9×13 inch casserole dish.

5. Bake uncovered at 375° Fahrenheit for 20–25 minutes.
6. Scatter mini marshmallows evenly across the top, and return to the oven for 8–10 minutes, until the marshmallows are golden brown and just beginning to melt. For a deeper toast, place under the broiler for 30–60 seconds, watching closely.
This may not be a typical casserole, but it sure is tasty. With the creamy sweet potatoes, and the gooey marshmallows, they make the perfect balance between texture and taste.
