Salad comes in a variety of forms, from your simple green salad, to Caesar salads, and even Caprese salads. Today, a delicious recipe that was created by my great grandmother has been passed down from generations, and will be shared with you. Enjoy!
Ingredients:
- 5 large English cucumbers
- 1 small red onion
- ⅓ cup apple cider vinegar
- ¼ cup extra-virgin olive oil
- 1 tsp kosher salt
- Black pepper
- 2 tbsp oregano
- 8 medium tomatoes (about 1 ½ pounds)
- 1 tbsp granulated sugar (optional)
Steps:
- Wash cucumbers.

2. Cut each cucumber in half lengthwise, then halve them again. Cut them in half width wise to create quarters.

3. Cut off the top and bottom of the red onion. Then, chop small red onion into thinly sliced quarters.

4. Place cucumber and red onion into a large bowl.

5. Sprinkle with kosher salt and toss.

6. Let the salad sit for 20 minutes.
7. Wash tomatoes.

8. Cut tomatoes in half lengthwise. Then, cut width-wise to create 1-inch pieces.

9. Add tomatoes, oregano, apple cider vinegar, olive oil, and sugar to salad after the 20 minutes has passed.

10. Taste and season with more kosher salt and black pepper as needed.
11. Serve and enjoy!
